Within the Gitega region, multiple small-holder farms (micro lots) are known for producing this high quality coffee. Winning the Cup of Excellence award in 2014, Mwizero, or “to have hope in,” describes the consistent quality of this coffee year after year. The farmers in the region learned that cherries mature later because they retain water longer. The additional maturation time results in more complex sugars, which makes the coffee sweeter & adds to the depth of flavor.
Immediately after the coffee fruit has been picked, it is de-pulped & fermented in fresh stream water at Kibuye, a small, tidy washing station in operation for quite some time. Once the coffee seeds have dried, they are meticulously hand sorted using large flatwoven baskets, or “urutaro”, to remove excess parchment & defects prior to the dry milling. This is to ensure the quality of the coffee beans. This coffee has a strong body & a citric acidity.
